Pineapple Mojito

I pretty rarely ever drink. Just not really my thing. But one of the few things I will have is a pineapple mojito. Mint and pineapple come together to form a really refreshing and delicious beverage. However, as I rarely go out to have these (and they’re pretty seasonal), I had to find a different way to make them myself. AND since I’m not much of a drinker, I wanted to find a way to make this alcohol-free. Well my friends, I did. And it is fairly low-calorie to boot. So, yeah. You’re welcome. (Sorry, I’ve watched Moana twice in two days and that song is stuck in my head.)



Calorie free coconut-pineapple soda (I get mine from Walmart)

Pineapple juice

Mint leaves

Lime (optional)

Crushed ice



Place mint leaves in the bottom, and use a muddler to muddle the leaves. Add crushed ice and equal parts of the coconut soda and pineapple juice. Stir and enjoy!


*Note: If you wanted to make this with alcohol, sub out the soda for coconut rum and switch the parts 2:1 pineapple juice to rum (or to taste).
