Curried Roasted Veggies

I first tasted this at Lazy Dog Cafe, and became obsessed. The flavors are so incredible, it is like heaven. If heaven were vegetables. I desperately wanted to find a way to recreate this at home so that I could have it whenever I wanted! Cranberry & Cilantro Quinoa Salad

This is a really fresh, unique and healthy side dish that works great with a grilled chicken breast for a great and different dinner. Although it is called ‘salad’ I serve it warm as a side dish. I suppose it could go either way!  Click here to get the recipe via Allrecipes.

Bacon Wrapped Blue Cheese Stuffed Dates

This recipe is incredibly simple, and has three ingredients–dried dates, blue cheese and bacon. It is utterly crazy how three things can have SO much flavor. These are amazing for holidays, parties or when you want to impress someone. Or a Friday when you’re hungry. The only thing I did differently was to add a big of cream cheese with the blue cheese to help add a bit of creaminess to the dates.
