Chicken Gyros with Tzatziki Sauce

I have had gyros and loved them, so why it took this long to attempt to make my own version, I have no clue. But while perusing the internet for recipes I passed a gyro one and thought, hey! I should do my own take on a gyro. So I did. Man, I hate to sound conceited, but if there was a gyro award, I think I’d win. They were amazing. And by using a store-bought rotisserie chicken, I saved a TON of time. Win! These gyros and the sauce were packed with flavor and came together in a second. My kinda meal! Chicken Tamale Pie

First thing: this is not my recipe. It is, however, an incredible one I make often that I got from the PinchOfYum blog. It is easy, SUPER delicious and a family favorite (even for my picky eater). Blue Cheese Butter Stuffed Chicken with Butter Infused Pan Sauce

This is one incredible recipe I found and made for Valentine’s day years ago. Since then, I’ve used the blue cheese butter separately in various recipes, as well as the butter infused port wine sauce. It is incredibly decadent, rich and utterly fantastic. Which means (if the butter and cheese part didn’t clue ya in) it is probably high in fat. Well. Worth. It.

Slow Cooker Barbacoa Beef

Barbacoa is richly spiced, shredded beef full of warm flavor and texture. It is fantastic in tacos, enchiladas, burritos…basically everything. And it is incredibly easy to make, and a great slow cooker meal. I love throwing this together in the morning and coming home to a house that smells so fantastic.
