Sausage, Peppers and Potatoes

This recipe is a snap to put together and even easier to prep the night before for quick cooking the next day. It is a great dish for beginner level cooks, as it is basically impossible to screw up. Click here for the recipe.

Ingredients:

1 kielbasa sausage (I use turkey; it is lower fat)

1 onion

4 large russet potatoes

2 bell peppers (whatever colors you prefer; I use green/red)

1 large jar sliced banana peppers, drained

4-5 Tbsp olive oil

salt & pepper to taste

1 Tbsp rosemary (optional)
-or-
1 Tbsp Old Bay seasoning (optional)

Directions:

Preheat the oven to 425.

Chop the potatoes, onion and peppers into 1″ cubes. Slice the sausage into 1/2″ rounds. Drain the banana peppers of their liquid. Put all ingredients into a large bowl and add the olive oil and herbs (if you want) and toss.

Line two cookie sheets & spray with cooking spray, or spray two 9 x 13″ baking dishes with cooking spray. Distribute the sausage/pepper/potato mix evenly between the two pans. Make sure to not over crowd them. Bake, uncovered, for 45 minutes stirring occasionally until the potatoes are tender.
