Marinated Olives

Marinated olives are simple and easy, and really delicious.  They’re also pretty impressive to serve at a get together, or holiday party. Additionally they only get better the longer they sit!



1 can of pitted green olives

1 can of pitted black olives

6-7 cloves of garlic, rough chopped

1 tbsp dried rosemary leaves

1/2 tsp dried thyme

1/2 tsp (or more to taste) dried red pepper flakes

4 Tbsp olive oil

1 Tbsp orange juice

1 Tbsp orange zest

couple of pinches of salt

Rough chop the garlic. Open and drain the olives. Heat the olive oil in a skillet on medium. Add the herbs and warm with the oil for a few minutes, and then add all the remaining ingredients except for the zest. Warm the olives for about ten minutes, stirring to coat the olives in the herbs and juice, and softening the garlic. After ten minutes, turn off the heat and let the olives cool slowly, and add in the zest.

Serve warm or cold. Store in an airtight container in the refrigerator for up to a week.
