Easy Homemade Chocolate Cake

Most of the time, if I bother to make a cake, I just buy it boxed. It is cheap and reliable, and you know it tastes great.

BUT…every once in a while it is nice to be able to make something from scratch. Some times it is nice to eat something that doesn’t have a host of chemicals in it, and something where you can control the quality and ingredients. That is why this recipe is great to have on hand.

This is a recipe from my family, although I doubt we “invented” it. It’s one of those old friend-swapped, church recipe book kinda recipes. So, ya know, a good one!

The thing that is nice about this cake is that it is not overly sweet, which makes it great when you frost it with a delightful homemade frosting, like THIS ONE HERE. (Because, really. Why make a homemade cake and ruin it with store bought frosting??) I remember SO many times that my mom would randomly get a cake craving (we have a gene for sweets in this family, I swear) and she’d whip this up and we’d have cake in less than an hour. Intrigued? Well give this a try!

1 1/2 c flour
1 tsp baking soda
pinch of salt
1 c. cold water
1 tbsp white vinegar
1 c. sugar
1/4 c. cocoa
1/2 c. oil
1 tsp vanilla

Preheat oven to 350.
Mix the flour, soda, salt, sugar and cocoa together and mix well.
Add in the water, vinegar, oil and vanilla and mix thoroughly.
Pour into an ungreased 8 x 8 pan and bake 25-30 minutes. Let cool completely before adding chocolate frosting.
