Easy Cake-mix cookies

I think out of all of my go-to “quick” recipes, this is a favorite. I love cookies. LOVE them. Pie, cake…those are great, but it means you have to cut it, get a plate and a fork, sit down…you’re stuck. But a cookie?? Portable. On the go. Can eat anywhere.

The thing is I’m not a super fan of making cookies from scratch. Despite my love of cooking, cookies are a big pain in the butt to me. (Don’t ask, I rarely make sense.) So THAT is the very reason this recipe is awesome. You shortcut the whole process by using a cake mix. Yep, you read it right. Cake mix.

Another big bonus here is cake mixes come in a huge variety of flavors, so you have a lot of options here. I’ve done white/yellow cake with chocolate chips for a basic chocolate chip cookie. I’ve done chocolate cake mix with peanut butter chips. I’ve used cinnamon chips, mint chocolate chips and even toffee ones. For Christmas, I use the peppermint chips with a regular or chocolate cake mix. My mom skips the chocolate altogether and puts coconut and pecans in hers. It is incredibly versatile and there are TONS of yummy combos to try.

1 cake mix (no pudding in the mix)
2 eggs
2 tbsp water
1/2 c. oil
1 c. chocolate chips (or other mix-in)
1 c. nuts (optional)

Preheat oven to 350.
Mix the first 4 ingredients together until blended. Add in your chocolate chips/nuts/mix-ins and stir.
Drop spoonfuls of dough on a lightly greased cookie sheet, and bake for 12-15 minutes until golden.
*note batter will be softer than a traditional cookie. That’s normal 🙂
